For centuries, green crabs have been embedded within Venetian cuisine: served soft-shell or shucked for delicious caviar known as Masinette. However, outside the Mediterranean, green crabs are hailed as one of the most destructive invasive species and have decimated the New England soft-shell clam population. When conservationists began focusing on removal to mitigate their invasive impact, a group of scientists and chefs landed on a new idea: what if we ate the problem?
In this green crab cooking tutorial, Mary Parks from Greencrab.org will teach you how to cook green crabs in your own kitchen! Along the way, SBN and guest speakers will inform you about how eating green crab can benefit your community, and the importance of consuming local, sustainable seafood generally.
